What does "heritage variety" mean?

Heritage, or heirloom, plants come from seeds that have been preserved for well over 50 years, and are chosen for their flavor and interesting appearance. Growing these plants enables local gardeners to take part in the preservation of rare and unusual varieties, not offered by mainstream producers and at risk of being lost. Ferme du Zephyr is located in Senneville on the island of Montreal, and is run by long-time N.D.G member Stephen Homer who is proud to be supplying us with "good wholesome transplants", free from synthetic pesticides, coming from untreated seeds and grown with attention paid to the soil and other life forms that co-exist on the farm.
